The California question: Hass vs. Fuerte?
"It’s this combination of great taste and thick skin that makes ‘Hass’ the reining royalty of commercial avocado varieties.
...The Fuerte is a medium-sized, pear-shaped fruit with leathery skin that stays mostly green even after ripening. The creamy flesh is extremely rich with 18% oil content. No wonder it was King of the Avocado for so long."
When a Fuerte is perfectly ripe, you can peel the skin off of the flesh, leaving a perfect naked avocado that is ready for slicing. I rarely make guacamole from Fuerte avocados because then are just so special all by themselves.
The Bacon variety is one of the very first of the California avocado varieties to be harvested each year.
